I bought the Senken set so I can speak to the delight of using the Senken knives. I suspect from the specifications that the Victorinox knives are a bit more delightful to use. If you want to save 200 bucks go for the Senken. If you want the best, go for the Victorinox. If you are happy with great knives go for the Senken. I can’t justify both.
I also have one Shun KAI 0711. It’s also a great knife. Either way, Victorinox, Senken or Shun, I can guarantee you will be delighted to use whatever you choose.
If you get the idea that I really love great knives you would be correct. I have a large collection in two knife blocks. From Chef knives to slicing knives to steak knives, take it from me that a great knife is a pleasure to use and there’s another great advantage.
A sharp knife is safer because it takes less effort to use so it’s far more controllable.
