Gas cooking is less expensive. Gas cooking saves time.. So.. If you want to save time cooking, use a gas cooktop or a gas stove. The heat is just about instant. Same for stopping the heat. Instantly stopped. An electric cooktop requires an electric coil to heat up which takes a lot of time for conventional electric coils but is a lot faster with an induction cooktop but you must use iron pots and pans with an induction cooktop. Gas can cook fast with any kind of pot or pan.
There are many types of cookware that cannot be used on the induction: Aluminum or aluminum clad, copper or copper clad, aluminum foil, glass/ceramic and some stainless steel products (because these will not attract and hold a magnet).
