Start with large dried lima beans. They’re much better than red or black beans. Soak them overnight then finish cooking the next day by slow simmering. Cook up the bacon. remove the bacon and dump out most of the fat then cook the red peppers then add the celery then the onions and some garlic. Add the beans, some Worster sauce, some mustard, some sugar and canned tomatoes and cook until it’s all hot. Serve.
